The First Pour

Every bar has a first night. Ours came on May 9, with the trailer parked in a driveway, the reclaimed wood backbar glowing under the neon compass, and mason jars of dehydrated lime, watermelon, and blackberry garnish lined up along the rail. Friends, family, and neighbors came to see what we had been building all winter. They stayed because the drinks were good.

A Five-Drink Opening Menu

Launch day got the full board instead of our usual two-signature format: margaritas three ways (strawberry jalapeno, blackberry, and classic), a honey lavender collins, a bourbon sour, and a blackberry old fashioned. The strawberry jalapeno margarita with a chili salt rim was the runaway favorite, and the honey lavender collins quietly converted everyone who claimed they did not like gin. Every syrup was made in house the week of the party, and the sour used our housemade mix, the same way every Compass menu does now.

What Launch Day Proved

The trailer ran the whole night on its own battery power and running water, with nothing plugged into the house, which is exactly how it works at every event since. The three-bay ice wells kept up with a full evening of shaking, the serving window fit two bartenders working at speed, and the framed menu board did the ordering for us. Everything we now promise on a booking, launch day tested first.

What We Kept From Night One

Every booking since has carried something from the launch. The garnish jars earned a permanent home on the rail because guests kept asking about them. The two-bartender window layout became the standard because it kept a five-drink board moving. The framed menu at each end of the counter stayed because nobody had to ask what was pouring. And the housemade-everything rule, sour to syrup, became non negotiable the moment we watched the difference it made in the cups coming back empty. Launch night was a party; it was also the last dress rehearsal the trailer ever needed.

From Our Driveway To Yours

Since that first night, the trailer has poured across the shore, from Toms River, our home base, up through Point Pleasant and Asbury Park. Launch Party Questions
